If you click on all those red x'es in reliability monitor, it gives you more information about those critical errors. You can expand even further by clicking on 'view technical details'
If you post the results back here for help, remember most of us are English speaking and can not read it if it is in what I believe is French.

If I click the red x'es there is no additional information, just "windows was not properly shut down"

The only remaing hardware which has not been changed is : Motherboard, CPU, SSD drive.

Could it be a motherboard issue ? or a CPU issue ?
Yes to both. It can also be an overheating condition. I am not a hardware expert but have done a lot of troubleshooting in my time. Have you monitored your temps during all this troubleshooting? I have i9-10900 which overheated when I got it. It proved to be inadequate cooling from the factory. I keep coretemp running in my system tray at all times. It's little icon tells me the highest temp across the cores. You can also use HWmonitor for more detailed info. If I see temps rising in my Coretemp system tray, I then open HWmonitor.

coretemp - Core Temp
HWMonitor - HWMONITOR | Softwares | CPUID

Have you tried disabling hibernation and using S3 sleep instead? I did that as well.

Look at this article to see if there are any suggestions there you haven't tried. How to Fix Windows 10 Kernel Power 41 Error? [Solved] - Troubleshooting Central

Also, FYI If you do a web search for "Evga RTX3080 event 41" you will find you are not alone in experiencing this problem when using this GPU.
You might try underclocking it to see if it resolves the issue. See comments here and on other forums. Random PC shutdowns (Event ID 41)

Good luck.
