This is what I do and am conservative in what I disable - mostly apps stuff but not windows so much. As @Rollback_Jockey said, you can create some obscure issues disabling the wrong service or task.

@ PerpetualCycle. That is very true. That is why I image my OS incase anaything goes south: configuration errors, bad drivers etc. Some folks are fine with MS running all kinds of processes 24/7. But even MS makes mistakes and one of the ones that started me on this exercise was their mis-configurationa of the trim scheduled task command, which is why I implemented my own version.
