I now have to shut down my computer, press escape and choose to install Windows from the USB key, and when choosing the disk I'll do “load” from this file. Is this correct?

Look under the RAID folder, if you can find *.INF and *.SYS files, then the drivers are extracted. Then browse this USB folder from Setup's Load driver button.

Yes. Pick the RAID folder.
After that i have 2 choices:
Intel(R) Chipset SATA/PCIe RST Premium Controller (...)
Or
Intel(R) NVMe Controller (...)

Which driver file did you download? I believe your PC may need the VMD version, this goes back to the Intel CPU question. Newer PC's use the VMD, older ones do not.

ASUS driver doesn't:

I don't know if your model has VMD, or uses the older controller.

I tried both drivers but got the same error message telling me they were out of date.

Your BIOS settings look correct for using Optane. Now the question is which version of the RST driver works for your setup.
Did you try the ASUS version, or the Intel version?
