Personally, I had to move the Start Menu to the left side of the Taskbar. My OCD just couldn't handle having nothing on the left side and the usual clock and task buttons on the right.

I tried to set 'show all icons in the system tray' & was disappointed to find that option has been removed...
I'm kinda shocked by the options that have been removed from the Taskbar altogether.

I am on the dev channel as there is a bug that seriously affects me that has been fixed in dev hasn't been migrated to the release yet.

One big one you missed out on is restore the old explorer context menu - first thing I changed.

Created shortcuts and pinned them to taskbar for often used settings that are more inconvenient to get to in Windows 11 (like start-menu's all-apps, windows update)

Actually, I did make the taskbar left-justified. It is not the start menu that is aligned to center or left, it is the whole taskbar.

I also made use of start menu folders.

When I first Installed W11, I saw the option to move everything to the left side like I had used it for years. I moved it to the left and kept it that way for an hour and then moved it back to the center where it's been ever since. I didn't really think I was a centered kind of guy but apparently I am.

I also like to keep a totally clean desktop screen with no shortcut icons and I like to use the hidden option for my task bar.

The only thing a changed is the 'Context Menu' behaving, no 'more'. For the rest I like the given UI.

As add-on I only installed 'ElevenClock' and 'RoundedTB'.

When I first Installed W11, I saw the option to move everything to the left side like I had used it for years. I moved it to the left and kept it that way for an hour and then moved it back to the center where it's been ever since. I didn't really think I was a centered kind of guy but apparently I am.

I also like to keep a totally clean desktop screen with no shortcut icons and I like to use the hidden option for my task bar.
I did that too. There wasn't much point keeping it on the left when there was no list to scroll through. I keep my usuals pinned to the task bar - so ended up only having about 3 icons on the start "menu" - which I then wanted to shrink, but couldn't. Looks silly with a few icons on. So added a load more lol.

And actually if you put everything you might ever need on the start "menu" you don't need the extra click to see the program list. Then it's just - different. But - in terms of manual usage it means using the mouse pad more sweepingly to click on things which I don't like - extra unnecessary wrist movements, which are not good for RSI. And clearly designed for touch screens. Hence I do prefer a straight up and down list.

Actually W7 needed an extra click to see "all programs" too - the difference was it was straight down in the same list, not opening a new list. What I don't like weirdly (maybe my OCD too) was a kind of left backwards click to open the main program list.

Main issue so far is in settings trying to find a "back" button - seems to be way over the far left at the top when the menu you're looking at is on the right. The settings menu is a normal list, which is good, but seriously dumbed down visually. Functional but looks a bit too basic.

It kind of reminds me of when old nokia phones changed from a list menu to an icons menu - just couldn't get on with visual icons instead of words on a list - but at least they gave you the option to change it back to a list.

Second thing: Removed all pins or apps from taskbar.

I only like to see stuff that are in use, not what I might use someday.

Define blostware.

I find it funny when people remove stuff that comes with Windows and call it bloat, when second thing they do is install CCleaner or similar 3rd party real bloat.

No bloatware here - clean install. I define bloatware as free trials of antivirus software.
