Which of these DNS providers to use in Chrome Setting "Select DNS Provider and why?

OS Default (when available)
Google (Public DNS)
Clean Browsing (Family Filter)
OpenDNS
Cloudfare (1.1.1.1)

For my computers, W11 and W10, I just use "OS Default". But then, I don't really know what the other selections offer and why I would choose them.

It's best left to automatic or OS default, especially if you travel. If you 'fix' the DNS servers in browser or OS you will not be able to access the internet in your hotel room. The hotel server will redirect you to the login page for the hotel's wifi.
This is also true for public wifi. It's better to set custom DNS servers in your router if you have special requirements.
I normally leave these on automatic too as your ISP may change the IP address of its DNS servers.

For Quad9 you would need to select the "custom DNS Service Provider" in Chrome and enter the following

True, that's the correct way to use it. My bad, this is the right address with correct browser variables:

DoH is a secure DNS protocol that is getting a lot of traction lately. Mozilla announced support for it in their Firefox browser and Google recently announced support for developers and Alphabet through Jigsaw released the Intra app for Android.
