Thank you. I remain somewhat puzzled. It would be nice to really know which driver is being delivered in the Epson download, where it is installed for use by the system, etc. And whether different utilities use or attempt to access different drivers.
Next time my scanner driver gets "lost" I will try to be more rigorous understanding things, but... of course this may get me nowhere fast.
I have had four different scan utilities operate the scanner successfully ... for a scan or two, then the fail to function. Presumably when the driver is somehow being "lost": overwritten, deleted, or otherwise made dysfunctional. At that point I will still have a scanner icon in Control Panel Devices, and selecting that creates the error message about the need for a WIA driver for this device. The only solution I have at this point is to reinstall the Epson software, which requires a system reboot.

You could also try this Scanner Software SilverFast for Windows 10 and macOS Catalina 10.15 I see they list GT15000 on supported scanners
It appears there is no "SilverFast" support for the Epson GT-15000 past Windows XP (32-bit) - SilverFast Buy :: LaserSoft Imaging

If you scroll down to "Operating system not supported" you will see "Windows 10" and Windows 11 on that list. Outside of the Epson software, it appears VueScan is the only option :(

And in case anyone thinks I'm a "VueScan shill", I'm not. I'm simply providing an alternative software solution that supports the Epson GT-15000. Will it do what the OP needs? They won't know until they try it, and then will decide if the cost is worth it.

And BTW (as a side note), this tutorial was created so users wouldn't have to buy VueScan for their Nikon film scanners.

@ptartist, the thing about VueScan and why they're successful IS driver support!!! Their product would be worthless if drivers were an issue. If they say a scanner is supported that means they have a driver for it, not just the software ;-)

You seem to be all over the place. Either the software works, or it doesn't?

I'm not clear on what your issue is cause you don't seem clear on what it is. And what's so wrong about a system reboot after installing a software package? :unsure:

VueScan ignores any manufacturer drivers and uses its own drivers to operate the scanner. So it should not be affected by Windows Update.

Though I disagree with the notion Windows overwrites the Epson drivers. It's certainly never been my case.

I am still leery of Vuescan for this reason: on the site they do not state that drivers are always included, or that they provide their own drivers. Instead they state that "in most cases" you will not need to install the manufacturer's driver (possibly because they bundle the manufacturer's driver in their own package or rely on Microsoft drivers). Also on the page for Epson GT-15000 support, I see these also ambiguous statements:

VueScan is compatible with the Epson GT-15000 on Windows, macOS and Linux.
If you're using Windows and you've installed a Epson driver, VueScan's built-in drivers won't conflict with this. If you haven't installed a Windows driver for this scanner, VueScan will automatically install a driver.

HOWEVER I will probably try it, as they still promote a trial version, and also a 7-day money back offer on purchases.

I don't know what happens if you have already installed manufacturer drivers, but surely VueScan has its own drivers, not manufacturer's, not Microsoft's. Also they don't support all possible models, so try it before you buy.

Well many companies make use of software modules when licensing permits ... so I don't know why they would not use available drivers available rather than choose to write their own... just saying.

I thought the whole point of VueScan was to support scanners that do not have drivers for the current version of Windows. If there are drivers why use it? Probably because it has more features and better TWAIN interface than manufacturer's software.
