Microsoft Windows 11 Home x64, version 22H2 build 22621.2361
I created a folder on the Start menu that contains shortcuts to Word, Excel, etc.

I can't find a way to add the shortcuts I have for Google Sheets, Google Docs, etc.

Any suggestions? TIA

Where are your shortcuts to Web apps (Google Docs, etc.) now?

I ask that because I have had good results from putting shortcuts on the desktop, and if they didn't then show a context menu "Pin to Start," moving them from the desktop to the All apps menu*, where they will have a Pin to Start context menu entry. Easy. Hope it works for you.

Sheets, Docs, and Slides appear anywhere in explorer that your can use the right click context menu "New". You can make a shortcut to Google Drive anywhere, but I do not believe you can make shortcuts to the individual components of Drive.

If you haven't already, your may want to revert back to the old context menu. I find it easier than the new one.

I find it funny that we are all so different here. You are wanting Docs, Sheets, And Slides and I have been searching for a way to take them off my context menu and there's no way to do it and make it stick. They come right back every time Google Drive starts.. :-)

Perfect! Thank you! (asks myself why I didn't think of that, but I'll be okay, lol)

I feel your pain, m'friend. There is so much in the way of detail that I'd like to just "fix," but there ain't no way (or there IS a way, but the next update puts it right back the way it was).

Fortunately, all @cbiweb wanted were a few Start Menu sh'cuts, and those are easy enough to create.

Now, if you EVER find a way to get rid of Bitmap image and Text Document in the "New >" context menu, please set off fireworks and ring bells, cuz many here have tried and many here have failed, and the beat goes on ....
