1. You shouldn't disable Defender unless you have a 3rd party AV/firewall to function in it's place.
2. With no AV/firewall running... you are.... DOOMED !!

3. IF you have a 3rd party AV/firewall running, it will "take over" the functions of Defender.

I do have a 3rd party AV/firewall running... and note the changes in Settings...

IF... you totally disable Defender's AV/firewall, you will also break Windows.
Many have tried, all have failed. :(

Simple - install a 3rd party AV tool.

Of course, I assume you are not so dumb as to use no AV package?

These are some tools that I use especially in dev VMs for blocking things like defender and Windows update:

For example I use a lot of snapshots in VMs and don't want to want to wait on updates that I am going to blow away anyway on the next snapshot revert.

Yes, set your network connections as "metered" and you'll get one tiny, boring, non-disruptive update a year. The others will wait for you to install them yourself [using WU or by downloading them directly from the MS update catalog].

There are tutorials for metered settings in both TenForums & ElevenForum.
It's actually the same procedure in both.

If you don't have any other a/v and simply you don't want the defender always on but only when you want to be on or of for ever what you must do???
Again i have disable tha tamper but still defender it enabled itself.

Isn't there any 3rd part program with simply buttons enable or disable Microsoft updates and defender when you want and stay like that(Enabled or disabled forever and not temporary).

If you set internet connection as mattered do you have any issues with browsers(Chrome, firefox, microsoft edge) or download programs(Internet download manager, jdownloader e.t.c.)?

No.
The only program I have come across with any problems is MSOffice Outlook.
- I gave up and there might be a solution nowadays.
- It refused to check mail automatically if the connection was metered. I had to tell it to check myself.

If you look at the tools at Simplify Your computer Usage that I posted you will find "single click" solutions.

@Gregory

Perhaps another useful programme may be DefenderRemover[dot]exe - now at version 12.7.2 and findable on GitHub.

This utility has buttons to disable or remove Defender, then re-able or recover as you wish.

I've used it now on Win11 for several upgrades (both the exe and Win 11) without incident, choosing to disable rather than remove. I think the 12.7.2 version now on GitHub may be the last as the author says he has completed it. This has survived upgrades of Win11, reboots and recovery from image backups, at least so far.

I use Autoruns (just Google for it) to test whether or not Defender is actually disabled. Just use Search/Quick Find for Defender in Autoruns. The small list I get in Autoruns only shows Defender listed in the shellex.dll context but not active. Since disabling Defender, I have not found it interfering in any activity I've chosen to do ... so far.

The only aspect that I have found to be wary of is initial downloading and first execution, as any AV you may have running will likely delete it on sight. I'm using BitDefender (free version) plus FreeFirewall; BitDefender needs to be turned off for download and initial execution but after that does not interfere. I store the DefenderRemover exe file on a backup USB card and instruct BitDefender to not scan external discs or cards.
